Bing-Huei Chen, male, food scientist, received his Ph.D. degree in Food Science & Technology, Texas A & M University, USA in 1988. His postgraduate career includes working at Fu Jen University, Taipei, Taiwan as Associate Professor from 1988–1994, Professor from 1994–2004, Distinguished Chair Professor from 2003–present, Chair of Department of Nutrition and Food Science from 1994-2000, Director of Graduate Institute of Medicine from 2006–2009, and Dean of College of Human Ecology from 2012–2015. He specializes in Lipid Chemistry, Pigment Chemistry, Instrumental Analysis, Food Toxicology, Functional Food and Botanical Drug Development and Biological Activity Determination as well as Nanotechnology. Until now he has published 215 research articles in internationally renowned journals and authored 11 book chapters in edited books published by International Publishers. He has received numerous awards including the prestigious National Invention Gold Medal Award by Ministry of Economics, Taiwan in 2018 and was honored with Outstanding Research Scientist by Ministry of Science and Technology, Taiwan. He was also honored with International Outstanding Inventor of Biotechnology by Taiwan Inventor Association/International Innovation and Invention Alliance Association in 2019 and Distinguished Professor by Chinese Academy of Agricultural Sciences, China in 2015.

Since December 2021, Katia Liburdi has been an Associate Professor in the Food Science and Technology sector at the Department of Agricultural and Forestry Sciences (DAFNE)-University of Tuscia. She has been a lecturer in courses (Oenology, Food Chemistry and Food Technology) for the bachelor’s degree in Food Science and Technology and Agricultural and Environmental Sciences. Moreover, she spent different periods abroad for research activities. During the past five years, she was “Research Visiting” at the University of Debrecen (Hungary), a “Research Assistant” at the University College of Cork (Ireland) and “Invited Professor” at the Faculty of Animal Science and Biotechnology, University of Agricultural Sciences and Veterinary Medicine (USAMV, Romania). Prof. Liburdi conducted research activity devoted to enzyme application in food processing. Recently, she studied the application of vegetable proteases of different origins to the cheese-making process. The derived knowledge has been published in 44 peer-reviewed quality journals (h-index 18, Total Citation: 790 (by 361 documents); Scopus ID: 14016315000, Web of Science: R-8222-2018. ID ORCID: https://orcid.org/0000-0002- 3175-5364). Since 2019, she has been Associate Editor of the Food Bioscience journal (IF: 5,318; JCR Q1 journal) and a member of the Editorial Board of Acta Alimentaria (Scopus and WoS indexed with IF: 0.384) and Foods (IF: 5,561; JCR Q1 journal) journals.

Chee Kong Yap is working as a full professor at University Putra Malaysia (UPM) since 2021. Prof Yap is an academician for more than 19 years at UPM and 24 years as a researcher. Prof Yap has supervised more than 80 undergraduates and 31 postgraduate students in the fields of ecotoxicology, environmental biology, environmental sciences, water quality and ecotoxicological genetics. Prof Yap has published more than 330 papers in refereed academic journals, 5 books (three of them published in NOVA Science Publishers, USA) and 32 book chapters. Until September 2022, 218 of them have now been indexed in Elsevier’s Scopus with an H-index of 32(> 3130 citations).Prof Yap has also been invited in honorary as Editorial Board member for more than 30 international academic journals. Prof Yap has been an invited visiting researcher at the National institute of Environmental Studies, Tsukuba (Japan). Internationally, Prof Yap has been an invited visiting scholar at Nihon University (Japan) and Hokkaido University (Japan), and an invited visiting researcher at Kobe University (Japan) and Kobe College (Japan). He has been invited to more than 20 international conferences as a keynote or plenary speaker. He has one accepted patent in the Phytoremediation method. He has also been listed as World’s Top 2% Scientists (The Career Achievement). Starting June 2022, Prof Yap has been officially appointed as an Adjunct Professor at the INTI International University Malaysia. Prof Yap is the recipient of the International Advanced Materials (IAAM) Medal in recognition for his contribution to “Chemical Safety and Sustainability” in 2022. He is currently International Associate Member of Japan Society of Water Environment, and a Lifetime Fellow Member of the International Society for Development and Sustainability (ISDS) of Japan. His profile has been recognized as ‘Award for Outstanding Contribution to Education’ by International Research and Development Centre for Publication (IRDCP), India 2022.

Dr Fabián Guillén is part of the consolidated Research Group on “Post-Harvest of Fruits and Vegetables” at the University Miguel Hernández (Spain) where he graduated in Food Technology. In 2005 he obtained his PhD and his first scientific publication was published in 2002. In 2007 qualified for his actual position as Associate Professor. Later, he was invited as a researcher to carry out three different research projects of 6 months each in New Zealand (October 2009- March 2010 at Plant & Food Research), Israel (April - October 2011 at Volcani A.R.O) and in the USA (University of Hawaii at Manoa, May-September 2016; August 2018). In the last years he has supervised 3 PhD Thesis and currently he participates in the supervision of 4 PhD students. During his 22 years of research activities, he has participated in 16 R&D Research Projects in public calls (National and Regional) acting as Principal Researcher in four of them and he has performed 26 Research Contracts with National and International companies. He published 92 Scientific Articles in international journals (JCR-SCI) of which 87 articles are in the first quartile obtaining an h-index of 45 and 6198 citations. He has also published 6 Scientific Articles in popular magazines being the author of 2 International Research Chapters. His research area of interest is the study and development of natural origin substances as a preharvest and postharvest technology with impact on the physiology of fruit, vegetables and edible flowers to increase the general quality increasing shelf-life.

Fabrice Vaillant (PhD) is a researcher from CIRAD outposted at AGROSAVIA "French Agricultural Research Centre for International Development (CIRAD)" and "Colombian research corporation for Agriculture (AGROSAVIA)", within the Food Quality joint research unit (UMR QualiSud) within the French Agricultural Research Centre for International Development (CIRAD). He is currently seconded to the Colombian Research Corporation for Agriculture (AGROSAVIA). Within his research unit, he works on the characterization of tropical fruits, their potential health benefits through untargeted metabolomic approaches combined with nutritional interventions and the development of innovative processes preserving food functional quality. In the field of nutrition, his main interest is in the discovery of biomarkers of dietary intake of tropical fruits and how exposure to these biomarkers might be linked to a potential health effect. He is author/co-author of more than 100 scientific publications and book chapters in these fields, including 5 patents.

Paulina has experience in researching pasture management improvement. She worked for New Zealand's largest sheep meat exporter company for three years in a variety of roles including projects in animal research, pasture improvement management, and ecological footprint. In these roles, she worked closely with colleagues from the academy, Ministry for Primary Industries, and farmers. Trained in animal grazing, pasture management, and animal production, Paulina holds a Doctorate in Pasture Ecology from the Austral University of Chile. She obtained her Bachelor's in Veterinary Medicine and a Veterinary Science Master's degree at the University of Concepcion, investigating the characteristics of meat from animals fed in semi-intensive systems. She joined Aysen University in Coyhaique City, Chile in August 2020, working as an academic in the Department of Natural Science and Technology. Areas of interest are pasture ecology management, sustainable animal production, and animal nutrition. Paulina is supporting gender equality in Stem and is part of the veterinary bioethics committee.

Beth Frates, MDis a trained physiatrist and a health and wellness coach, with expertise in Lifestyle Medicine. She is an award-winning teacher at Harvard Medical School, where she is an assistant clinical professor. Dr. Frates has devoted most of her career to helping develop lifestyle medicine as a specialized field with board certification and to bring lifestyle medicine into mainstream medical education. In 2008, she started the first Lifestyle Medicine Interest Group at Harvard Medical School. In 2014, Dr. Frates developed and taught the first college Lifestyle Medicine curriculum at the Harvard Extension School, and it is still one of the most well-received courses offered at the school. Now, she teaches three courses on lifestyle medicine topics at the Harvard Extension School.She is the second woman to attain Fellow status at the American College of Lifestyle Medicine. In August 2020, Dr. Frates was voted president of the American College of Lifestyle Medicine, a 9,000-member organization.Dr. Frates will be the third woman to serve since 2004, and her term endsin 2024. In addition, Dr. Frates co-authored The Teen Lifestyle Medicine Handbook, published in October 2020and co-created the Teen Curriculum consisting of a Teacher’s Manual and 12 PowerPoint decks which together can be used to teach and empower middle-school and high school students to adopt and sustain healthy habits. As Director of Wellness Programming at the Stroke Institute for Research and Recovery at Spaulding Rehabilitation Hospital, a Harvard Medical School affiliate, Dr. Frates has created and implemented a 12-Step wellness program, PAVING the Path to Wellness™forpatients and providers. Most recently, she co-authored the book PAVING the Path to Wellness Workbook: A Guide to Thriving with a Healthy Body, Peaceful Mind and Joyful Heart. As of the fall of 2020, Dr. Frates serves as the Director of Lifestyle Medicine and Wellness for the Department of Surgery at Mass General Hospital. I am working on traditional fermented milk products. I specialize in food microbiology, food safety, fermentation, bioinformatics, and pharmaceutical bioinformatics. Siri Neh Ndenkyanti is a Ph.D. research scholar in Plant Breeding and Genetics at the Department of Crop Science, University of Nigeria, Nsukka. From the year 2016-present, she has been engaged in an ongoing research project geared towards “Improvement of consumers’ preference seed traits, proximate composition and grain yield of cowpea in Nsukka, Southeast Nigeria,” in collaboration with senior breeders and geneticists of the Department, and, research scientists at the Cowpea Breeding Unit of the International Institute of Tropical Agriculture (IITA) Ibadan, Nigeria. Inspired by the high demand versus low supply, coupled with the low production and productivity of cowpea grain in Southeast Nigeria, her team conducted several field evaluations, hybridizations and laboratory analyses on improved and indigenous cowpea genotypes to improve grain yield, yield stability and the nutritional value of cowpea grain. Their findings on high levels of heterosis for grain yield, crude protein content and seed size among the F1 hybrids, and the high genetic variability among breeding lines pre-suppose the possibility of curbing nutritional challenges of the teaming population in sub-Saharan Africa.

Dr. Sher Ali, Assistant Professor in the Department of Meat Science and Technology, University of Veterinary & Animal Sciences Lahore, Pakistan, holds B.Sc. (Hons.) and M.Sc. (Hons.) degrees in Food Science & Technology from the University of Karachi. In 2011, he won a grant to pursue Ph.D. under the overseas Ph.D. program of the Chinese Scholarship Council and completed his Ph.D. with distinction in 2015 from Nanjing Agricultural University, China. In 2015, he joined as Assistant Professor in the Department of Meat Science and Technology, UVAS. Before joining UVAS, he also served in the food industry as a Quality Controller from 2009 to 2011. Dr. Sher Ali is an expert in meat science and technology and has several SCI publications in renowned peer-reviewed journals. Moreover, he has presented his work at many national and international conferences. Furthermore, he has expertise in meat quality, safety and nutrition. Additionally, he has worked on the effect of freeze-thaw cycles on meat quality, the cold supply chain of meat, and preservation technologies of meat, with particular emphasis on the enhancement of eating quality. Moreover, he has hands-on chemical techniques like an assessment of protein and lipid oxidation; high throughput instruments like NMR, HPLC, GC, GCMS, Western Blotting, SDS-PAGE, 2DE Gel Electrophoresis, HPP, Viscoelastic properties and textural profile analyzer; along with microbial safety of fresh and frozen meat. Currently, he has been working on new product development as well as value addition. His current areas of interest are meat technology, post slaughter technologies for improving meat quality, as well as enhancement of eating quality and shelf life.

Dr. Sujata Dutta Hazarika is a sociologist with eighteen years of experience in research in areas of sustainability and public policy, governance, sustainable development, education and natural resource management. Dr. Nada Ćujić Nikolić was born in 1986 in Belgrade. She graduated in the Faculty of Pharmacy at the University of Belgrade in 2011. She defended her doctoral dissertationat the Faculty of Pharmacy, Department of Pharmaceutical Technologyin 2017.Since 2012, she has been employed at the Institute for Medicinal Plants Research "Dr Josif Pančić", and from 2022. as a head of Department for Pharmaceutical Research and Development. During her doctorial studies, she completed two study visits (Ege University, Izmir, Turkey; University College Cork and Teagasc Food Research Center, Moorepark, Ireland). She participates in different scientific research projects, national, bilateral, international, as wellin projects related to development of new herbal products and are reflected in the practical application of scientific results. As an author and co-author, she has published a large number of publications and chapters in international scientific journals and monographs, national journals, announcements and lectures from international conferences. Areas of scientific research are oriented to pharmaceutical and technological research, optimization of extraction methods, microencapsulation techniques(spray drying, lyophilization, electrostatic extrusion)using modern pharmaceutical carriers,characterization methods of microsystems,different stability studies, development of new pharmaceutical preparations based on medicinal herbs, and chemical characterization of herbal drugs and extracts with special reference to polyphenolic compounds.Part of hers scientific work is oriented to research on the development of various semi-solid preparations for application to the skin and the application of in vivo tests used to determine various skin parameters.

Dr. Fatma Ali received her Ph.D from Tianjin University of Science and Technology, Tianjin, China. Since 2019, she works at Department of Biological Chemical Engineering, College of Chemical Engineering and Materials Science, Tianjin University of Science and Technology, Tianjin, China. She is the first author of more than 10 peer-reviewed papers in Food Engineering (https://www.researchgate.net/profile/Fatma-Ali-43). She collaborates with Food Science and Technology researchers on the regular basis. Her area of interest is dairy technology, non-thermal techniques, milk proteins, plant based food, and food chemistry.
